Coarse ground cornmeal, olive oil, lemon zest, and soft apricots make an engaging cookie experience. Together they contribute an earthy sweetness and a nubby, crunchy texture. This is an adaptation of a twice-baked biscotti recipe that we’ve finessed to a slightly softer version.
Once they arrive, feel free to pop them into a warm oven to crisp them further. Cornmeal Apricot Fingers are available in a full box of 3 dozen (36 cookies), by the dozen (12 cookies), or by the half dozen (6 cookies).
Each cookie is approximately 3.5 inches long.
